    Poaching Mahi-Mahi is a delicious and easy way to serve this fish and often the technique used at your favorite restaurant to cook Mahi. Poaching fish is easier than you think and a wonderful way to not only cook fish quickly but also helping to keep it moist and flavorful while keeping down the calories. It’s really that easy, and when you think of it the court-bouillon is basically just a mirepoix (cut up celery, onions and carrots, used in many dishes as well as soups). If you’d like to test the fish to see if it’s done insert a very sharp knife into the thickest part of the Mahi to see if it’s done to your liking.

    A Love Letter to Beautiful Istanbul

    I like to start my day early with a traditional cup of Turkish tea at the Seven Hills Hotel rooftop restaurant in the Sultanahmet district with its perfect sunrise views of the historic Hagia Sofia as a backdrop. Across the plaza from the Hagia Sofia is the Sultan Ahmed Mosque, or Blue Mosque as it is more commonly known, which was completed in 1617. Just feet away from the Hagia Sofia and the Blue Mosque, and sitting beneath modern city streets that are teeming with pedestrian, automobile and tram traffic, a walk through the underground space of the Basilica Cistern is an opportunity to physically experience a world that existed 1500 years ago. Back in the Sultanahmet district at the end of a wonderful day of sightseeing, I was once again on the rooftop of the Seven Hills Hotel to watch the sun set over the Blue Mosque-this time with a glass of wine.

    I Just learned that I placed in 5 different categories in the first International Food, Wine and Travel Writers Association photography contest. In the Church of the Holy Sepulcher in Jerusalem, visitors prostrate themselves on the Stone of Anointing where it is believed that Jesus’ body was prepared for burial, while a Christian orthodox nun standing behind them, looking at her cell phone. The Grand Prismatic Spring is one of the most colorful hot springs at Yellowstone National Park. In the Tualatin Valley near Portland, Oregon, a newly planted vineyard is underplanted with red clover to keep the weeds at bay.

    When you think of stout and the complex intensity of the brew, with its deep flavors, mixing it with chocolate, adds to the complexity and increases the depth of the chocolate….sigh. Let’s start by gathering the ingredients we need to make a Guinness Chocolate Cake. This step brings out the cocoa’s deep chocolate notes and helps create the rich chocolate flavors that this cake is known for. By melting the butter and adding it to the Guinness and cocoa, the butter now reacts to the mixture like oil and produces a soft moist crumb.

    Dublin Coddle with Chicken Sausage

    It’s a traditional Irish dish that was typically served on less affluent dinner tables in Dublin. You’ll see it made with sliced sausage and sliced potatoes, but a Dublin Coddle is a stew, a one pot meal that is rustic in nature. My version comes from a pub in Dublin where I enjoyed this delicious dish with a pint of Guinness and a loaf of crusty bread. Place bacon in an oven-proof skillet or Dutch oven and cook over medium-high heat until the bacon is well cooked and crispy about 5 minutes.

    Irish Cottage Pie aka Shepherd's Pie

    But the truth is Shepherd’s Pie is made with ground lamb, not ground beef. The beef version of this Irish Classic is called Cottage Pie and has been a favorite in our house since our trip to Ireland a few years ago. Let’s start by gathering the ingredients we need to make the beef filling of the Cottage Pie. Add the ground beef and cook for 8-10 minutes or beef is nicely browned.

    Grilled Alaskan Rockfish with Grilled Shrimp Recipe

    so don’t be afraid to give it a good soaking in a tasty marinade, add your favorite flavors to the marinade and whether you grill it, pan sear it or oven roast it Mix the tamari sauce, pomegranate molasses, olive oil, lime juice, sugar, garlic, and crushed red pepper until well blended and place it in a small pan or ziplock bag to marinate the rockfish. Place Rockfish on a very hot grill (or grill pan) and allow to sear on one side until the Rockfish gets nice grill marks and good color. This is the grill pan I use -> Le Creuset Grill Pan.

    Cajun Style Florida Snapper with a Lime Margarita Sauce

    Today I was lucky enough to pick up some beautiful Snapper filets at my grocer, so I thought I would cook up a Cajun Style Florida Snapper with fruit salsa and a lime margarita sauce. Add my Lime Margarita Sauce and you’ve just turned out one delicious Restaurant Style Meal at a fraction of the cost of dining out. If you don’t like snapper or simply can’t find it at your grocery store, there are many types of fish you can use instead of snapper. If you can’t have alcohol or don’t like the taste, you can replace the tequila with apple juice, chicken or vegetable stock, or water.
