Highlights
  • Easter Chocolate Treats: CookBlogShare 2021 Week 13

It’s a three layer chocolate cake filled and covered with vanilla buttercream, decorated with a chocolate ganache drip and lots of Creme Eggs. Although it’s a great all year round cake, it’s topped here with pretty pastel mini eggs. Whether you’re looking for a showstopper cake for the Easter holidays or simply a way to use up leftover Easter eggs and chocolates, this Easter chocolate traybake cake with super simple vanilla sponge and whipped chocolate ganache is a sure-fire winner. What you can expect I will endeavour to visit every post that’s linked up this week and pin the recipes to the Pinterest #CookBlogshare board.

    Classic Vegan Coleslaw

Made with my homemade vegan mayo and yoghurt, this classic side is perfect for Summer parties, potluck picnics and BBQ's. Why We Love this Classic Vegan Coleslaw Coleslaw is a quintessential summer salad and this one is lip-smacking delicious. I think you'll love that it's: Yoghurt: making for a lighter salad, I like to add yoghurt to my dressing. If you can't get a good natural yoghurt swap it for vegan sour cream or just use a full cup of vegan mayonnaise.

  • Oca Latkes (Fritters or Pancakes): Two Ways

How to Prepare Ocas for Cooking If you buy ocas they should be fairly clean, so will only need a quick rinse in a bowl of water. Although they’re best served hot from the pan, it’s fine to keep them in a warm oven for thirty minutes or so. Remove the lid and fry for a further two minutes to make sure any water evaporates and the rosti is crisp. The easiest way to remove the water from the grated oca and onion, is to squeeze it in a clean tea towel or muslin cloth.

  • Vegan Hot Cross Buns for Easter Deliciousness

How To Make Vegan Hot Cross Buns From Scratch Traditional hot cross buns are made with butter, milk and sometimes eggs. The method isn’t really that much different from making traditional hot cross buns, except it’s a bit easier. It’s traditional to use currants for hot cross buns. Like most yeasted bakes, hot cross buns require a hot oven.

    Hearty Vegan Bolognese

While many of my pasta recipes are one-pot and easy like my one-pot mushroom pasta, my mushroom stroganoff or my one-pot spaghetti with lemon and olives, this vegan bolognese takes a little longer. This may take up to 10-minutes. Step 2: While your vegetables are cooking away, add the dried porcini mushrooms to the boiling water and set aside for 5-minutes for the mushrooms to soften. Cook until the milk is almost cooked away and then add your red wine and cook for around 3 minutes, stirring regularly Step 7: Now you can go ahead and add the canned tomatoes, soy sauce, stock and nutritional yeast. On toast with melted cheese: when I was little my mother used to serve leftover bolognese sauce over a thick piece of toast with cheese.

  • Green Flatbreads With Wild Garlic And Nettles

I like to use a mix of nettles and wild garlic as I think it makes the best flavour combination. If you’re not quite sure what wild garlic, or ramsons as it’s also known, actually is, take a look at my wild garlic pesto post. Unless you’re happy to grasp the nettle firmly and pick them with your bare hands in CT fashion, it’s best to wear rubber gloves or snip them into a basket with a pair of scissors. Whilst it’s best to handle raw nettles with gloves, the sting completely disappears once they’re cooked.

    Vegan Carrot Cake

Moist, light and so simple to make, this vegan carrot cake is a great back-pocket recipe for gatherings, guests or simply to treat yourself. Besides the obvious, this cake is: • super easy to make; this is another mix and bake recipe just like my vegan pumpkin cupcakes. How to Make the Simplest Vegan Carrot Cake You'll find full instructions and measurements in the recipe card at the bottom of the post. Once the cake has come out of the oven, allow it to cool completely before topping it with a vegan cream cheese frosting or simply dust it with powered sugar.

  • Baked Yeast Doughnuts: Light, Fluffy and Flavourful

Because I use wholemeal spelt flour, you only need to knead the dough for about five minutes. Although there’s not a lot of hands-on time required, you’ll need to allow about an hour for the dough to prove and double in size. Doughnut dough has very little sugar in it, so unless you fill your doughnuts with jam, ice them or coat them with sugar, you won’t be getting a particularly sweet treat. You don’t need a doughnut mould or pan to make these baked doughnuts, but it makes life a lot easier if you do.
