I am the World Food Side Dish Champ 2012 Las Vegas (World Food Championships). Gluten-Free, not by choice! I develop gluten-free recipes using Brand's products. I create the recipe, photograph the recipe, and make videos and reels on Instagram.
I make baked goods, entrees, appetizers, sandwiches, desserts, etc. I make my own basic flour blend. I also work with different types of flours which are essential in gluten-free baking.
I was raised in an Italian Family. I learned to cook from an early age. After having to change my diet to gluten-free only, I learned how to enjoy all the foods I grew up making. I still have many recipes blocked on my blog. They are definitely prizing-winning recipes and I am willing to share, such as a delicious pizza crust, homemade Oat Bread, and a moist cinnamon roll. I also have about 100 crepe recipes (savory or sweet).
I research the history of a particular recipe and write up the recipes with descriptions. I also photograph the recipe and submit many variable shots.
I can work with a schedule from 3-6 months out. If available, I would be willing to work on short notice.

My second turn in dish. Veal meatballs topped with a Marsala reduction in a bed of sweet pea risotto. We had to use ground veal because it was a required sponsor product. As you know veal is very lean. I wanted veal to be the star of the show and not include any other meat. I decided to add ricotta cheese since it adds moisture to the meatball.
