Hi friends! First things first – a huge good luck shout out to any of you running the Boston Marathon today! I wish I were there to cheer in person, but I’m excited to follow along virtually. While we’re talking about running, let’s start this post off with my weekend run, shall we? I always really look forward to my weekend run dates with friends
We’ve had some good eats this week, and a bonus was that most of our dinners were eaten outside – it was gorgeous this week! The above pictured quinoa salad + fish was such a yummy and fresh dinner. The base was a mix of quinoa + cucumbers + tomato + scallions + a vinaigrette (lots of lemon juice + olive oil + dijon mustard + some salt and pepper), and the fish was pan seared in olive oil with some oregano, salt, and pepper sprinkled on before cooking
