3 square meals (or 1-2 when I’m intermittent fasting) of healthy, veggie-forward ingredients had me feeling amazing! Over time, though, as zoom calls packed my days and kids got used to having Papa around to play with them all the time my joy of cooking faded. I felt a bit guilty, I gotta admit, what a privilege and all I wanted was the cold comfort of a fast meal or someone waiting on me. We throw in some purple sweet potatoes and carrots and include the perfect Fall spices to give you the perfect mix of colors, flavors, and smells to fill the house with joy again.
This heirloom squash almost disappeared in the early 1900s, only to make its way back in style as people are rediscovering the rich, creamy taste of delicata. Delicata squash is also known as Bohemian, peanut, or sweet potato squash. always loved fries, but never liked how alternative veggie fries are filled with binders and processed ingredients. We were the first people to put pre-packaged veggie noodles in the grocery store, creating a fun and simple way for everyone to get their veggies without sacrificing time and quality. From there we quickly outgrew multiple facilities and built our own vegetable processing facility (2nd largest in Central Texas), just for making noodles. Starting with just two humble noodle products, we have since expanded into veggie rices and veggie-based meal kits that have won accolades and multiple awards along the way. Certified Organic veggies, no additives, and a whole lotta love goes into every noodle (and every grain of veggie rice, meal kit, and seasonal side dish).
