This recipe is super simple, hearty and very versatile, meaning you can really make it what you want with what you have. In another large pot add your chopped garlic, onion and olive oil and let simmer for 3-5 mins • Take fully cooked chicken out of the pot and cut it up into chunks, add the chunks to the pot and stirs well. Add the can off coconut milk and lets simmer for 5-10 minutes until potatoes are fully cooked.

Cut the dark green off the ends of the leeks and then slice them length wise to clean them out. Let the butter melt all over them on medium heat and stir occasionally so they don’t burn. I don’t have measurement for the spices, eye it out and add more if you need more flavour. Once the potatoes are soft, take an immersion blender and blend it partially so the leeks are blended but you can still see small chunks of potatoes.
