Buying and Storing Salad Greens

I’m sure you noticed that you can buy greens in so many different ways — greens come in bulk (loose leaves), in heads or bunches, in bags and in small or large plastic (clam-shell) boxes? Because I’m a salad feen, I typically buy at least two types of greens to get me through the week. I wash any greens I buy from the bulk bins because gritty salad is plain gross (been there, done that)! If I buy a large plastic tub, I’ll usually put a dry paper towel in the with greens and store the container upside down in the crisper drawer.

8 Week 10K Training Plan

How I’m prepping for the Monument Ave 10K with new workout gear and an easy 8-week 10K training plan for runners. Before signing up for the race my workout schedule consisted of 4-5 days of group personal training (which focuses primarily on strength, but does involve a little cardio at the end of each workout), 2-3 days of weighted walks and a yoga class here and there. Ideally I would be running 2-3 times a week to prepare, but because strength training is my focus right now and because I’m just running this race for fun (rather than trying to PR), I’m keeping my training super light. In the past, especially when I first started running, I followed a more regimented running-focused 10K training plan similar to the one I’m sharing below to prepare.

Easy Baked Falafel

Inspired by our trip to Israel, I created a baked falafel recipe that is just as easy as it is tasty! Rather than just daydreaming about these flavors or depending on a local restaurant, I decided I needed to create my own recipe for baked falafel. No, soaking is not hard, but sometimes I forget to start the process the night before and when mama wants falafel, mama wants falafel. I like to eat these on their own, with a sauce or dip (can’t go wrong with hummus or tahini), or as a vegetarian protein option for pita sandwiches, salads and bowls.

Mediterranean Salmon Salad (Video)

Inspired by a menu item from one of my favorite spots in Richmond, this Mediterranean salmon salad is loaded with flavor, incredibly healthy and gluten-free. Does it take you all a little bit to get adjusted to daylight saving time? I always forget that it takes me a couple days to get back on schedule
