Turn dough onto a large sheet of parchment paper and roll into a 1 ½ inch log, wrapping tightly with parchment as you go. Remove dough from freezer and quickly slice into ½ inch rounds, placing on a parchment-lined baking sheet about ½ inch apart. *If you’re making sandwiches in advance, wrap each individually in wax paper to prevent freezer burn, and freeze for up to one month. I found a delicious store-bought dairy-free Chai flavored ice cream to make these come together super fast.

Summer is here – school is out, and in our neck of the “woods,” and the kids are spending every waking minute outside, begging for just one more trip down the block, one more second of evening light. It reminded me I need to get moving making yummy ones myself; (summer fruit makes these raspberry avocado pops a great way to add nutritional value to a favorite summer treat! ) even if I’m not adding sugar in my diet – currently on my third round of Whole 30 – Coconut oil, maca, and cacao nibs all add nutritional boost, and I feel like I’m splurging without guilt when we make these. Popsicles made with cold brew coffee and superfoods maca and coconut oil that are dairy-free, refined-sugar-free and Paleo friendly.
