My Tokyo travel Guide

I went to Tokyo for 7 days (not including travel days) and to say I had a jam-packed schedule would be an understatement, and on our return home I feel like we only barely scratched the surface of one of the most fascinating cities in the world. Now obviously I’m no expert when it comes to where to eat in such a vast city with countless restaurants and cafes, but I can tell you of a handful of places we tried and had some of the best meals we’ve had on our travels. It was everything I expected and like nowhere I’ve been before, it’s been uncorrupted by western culture and remains very much in its own bubble. We stopped for a drink after the walk and I have to say I’ve been dreaming about Pizza ever since because it looked so good.

BEET BEAN DIP w/ Broccoli & Purple Carrot Bites

These are my favourite of the STRONG ROOTS bites they have an extra crispy outer layer with a soft middle, I must go through a bag a week. These bites are not only perfect for snacking on by themselves but also adding to wraps or salads for a convenient warm filling. When I step in the door after a long day, ravenous, it’s nice to know I can have a warm satisfying lunch or dinner made in under 15 minutes without any hassle. One of the most important factors to a good wrap is a great spread – say hello to the Beet Bean dip, easy, tasty and vibrant.

VEGAN Hazelnut Muffins

I don’t think I have been hounded for a recipe as much as this one after I made it over on instagram stories. Well, it’s finally here, a delicious fluffy muffin with minimal ingredients and all the taste. I made this recipe using innocent dairy free hazelnut as part of my work with them, opt for whichever nut drink you want here the toasted hazelnuts themselves give a really nice flavour to the muffin already.
