Sweetcorn Red Lentil and Coconut Chowder

To say that the start of 2019 hasn’t gone at all like I expected to would be a bit of an understatement. Though less than 3 months young, this year has already gifted me with what seems like a lifetime’s worth of challenges, and man am I tired

Vegan Cairo Guide

Zooba can be found across Cairo at six locations in New Cairo, Korba, Maadi, Zamalek, City Stars (Nasr City) and AUC. |Website Having followed them on social media since their opening in Cairo, I vowed to make this trip the one where I would finally visit Sea Salt Bakery & Cafe in Zamalek. Stavolta has three locations across Cairo in Korba, Maadi and Sheikh Zayed | Facebook page I was also very excited to try Kaju’s raw vegan ice cream but wasn’t able to buy a whole tub for fear that it would melt while we were out and about, For my final meal in Cairo, my parents and I decided on The White Owl, a charming little eatery in Maadi. The White Owl is located at 7 Road 216 intersection with 206, Maadi as Sarayat Al Gharbeyah, Al Maadi, Cairo | Facebook page

Salted Caramel Date Cake

Although in theory one of the perks of Ramadan is short working hours – I’ve found myself desperately grasping for more time at the end of each work day, often resorting to shooting out a few e-mails after iftar or early in the mornings before heading into the office in the interest of “getting a head start” and “tying up loose ends”. Naturally sweetened and bursting with moisture and dripping with vegan salted caramel sauce this date cake is the perfect baked good to bring to a potluck or even enjoy at home throughout the week as a guilt-free dessert. To a blender, add the almond milk, dates, coconut oil, coconut sugar, vanilla and mashed banana and blend until smooth - the mixture should look like a thick caramel sauce. Fold in your chopped walnuts using a small spatula Transfer the mixture into your cake pan and bake for 25-30 minutes until a toothpick or knife inserted into the middle comes out clean Allow to cool before pouring on the sauce and toppings
