With the Holidays upon us, I figured it’s time to once again share my Dads famous SECRET chocolate chip cookie recipe, that I modified to be gluten free! Since I was a little girl, we’ve been making about 3,000 of these cookies every year for his family, friends & clients and it’s my favorite tradition! I hope you’ll enjoy it as much as I have! 🍪 - 1 cup dark brown sugar - 1/2 cup white sugar - 1/2 teaspoon baking soda - 1/4 teaspoon salt (optional) - 1 tablespoon powdered espresso - 1 tablespoon pure vanilla extract - 1 cup salted butter - 2 large eggs - 2 1/2 cups @bobsredmill gluten free cup for cup flour - 2 cups semi sweet chocolate chips 🍪 DIRECTIONS - Combine sugars, baking soda, salt, espresso, vanilla and butter and mix in stand mixer on low until smooth paste is formed. - Add eggs and continue mixing. The best fresh pizza crust I’ve had to date😍 If you haven’t tried @zeiafoods crusts yet, get yourself some ASAP. Not only are they gluten free but they’re also dairy free & preservative free! The crust was fluffy yet crispy and truly delicious.
