Not only do these crispy quinoa and sweet potato flatbreads come with a heaped serve of health benefits, they taste pretty bloody delicious too. Sweet potato is known for being packed full of vitamin C and E, skin savoiurs to say the least and quinoa is a lovely source of plant protein, the base of every healthy plate. (I used Nush almond cream cheese, oyster mushrooms, rocket leaves, walnuts, black sesame seeds and truffle oil) 1 Boil your quinoa for roughly 20 minutes in just over double the amount of water to quinoa. Preheat your oven to 180C. 2 Once cooked, pop the fluffy quinoa in a food processor along with the sweet potato and remaining flatbread ingredients.
Not only am I thoroughly enjoying the long days, the smell of neighbour’s BBQs smoking away, and the idea of pizza in the park long after bed time has passed, but I am a huge fan of summer’s seasonal produce. Utilize the entire carrot by roasting them whole, and setting aside the tops to blitz into a quick carrot top pesto, amazing when drizzle over the top of the final soft outcome. I’ll also blitz a handful of steamed carrot chunks into an easy cashew nut and carrot pâté, amazing when spread thickly on toast. Lay it over an open flame then scoop out the centre, plus part of the burnt skin, for an easy baba ganoush, or simply bake alongside layers of sliced potato and red pepper for an easy tomblet, a popular Spanish dish.
When I went plant-based and started truly focusing on hormonal balance through nutrition, I swore that the love and connection that I had to food would be just as strong, and the memories and nostalgia that surrounded certain foods would remain. When we overload the body with stress in the form of processed junk, sugar, caffeine and alcohol, the liver has to work extra hard to get rid all of the crap instead of focusing on the effectively balancing your hormones.
