Homemade Dairy Free Chocolate Easter Bunny (3 Ways)

6 inch chocolate bunny mold (for our large bunnies): you can make 2 bunnies per mold so if you’d like to make more than 2 at once, you can buy 2-3 molds For our chocolate bunnies, we used the Nestle Simply Delicious semi-sweet chocolate chips and the Great Value brand allergy friendly white chocolate chips. If you’d like to make sugar free chocolate bunnies, check out the Bake Believe sugar free semi sweet chocolate chips that don’t have dairy in them (our local Walmart carries them). If you make white chocolate bunnies, I’d use the Great Value allergy friendly white chocolate chips rather than the Nestle Simply Delicious white chocolate since the Great Value white chocolate is much more crisp/firm and comes out of the mold well (

Sparkling Strawberry Rhubarb Mocktail (or Cocktail)

This Sparkling Strawberry Mocktail is a great drink for any spring occasion, and would even be perfect for bridal showers or baby showers! We used the IKEA rhubarb drink concentrate (dryck rabarber) for this recipe, but it’s not available online at all unless you’re willing to spend $17.50 a bottle which is ridiculous since it’s sold in IKEA stores for only $4.99. If you don’t have access to an IKEA to buy this pretty bomb rhubarb drink concentrate, then you can try a few other options. Please note that we haven’t actually tried any of these products or recipes, and you might have to use a different ratio of syrup to sparkling water depending on the brand or recipe you’re using.

Homemade Vanilla Coffee Syrup (or Pancake Syrup!)

One way to get rid of or reduce the sugar crystals is to add a bit of corn syrup (regular corn syrup is not the same as high fructose corn syrup). If you have sugar crystals in the bottom of your bottle when you’re done with the syrup, just fill the jar with really hot water and let it soak to help dissolve and break up the sugar crystals so you can clean the jar. Our recipe has fewer and smaller sugar crystals than the recipes I used to use, but the longer the syrup sits, the more crystals will form (in general). If you have a bunch of sugar crystals or very big ones, heat some water to boiling and pour it into your jar or bottle (make sure it’s a heat-proof glass jar or bottle) and let that soak for a while to loosen the sugar crystals.

The Living Planet Aquarium, Utah

A couple weeks ago, we drove down to Utah, went to the Living Planet Aquarium, did some exploring outside of Washington, Utah, and hiked in Zion (I’ll share photos of that soon!). do a post about Zion National Park in the next week or 2, but I wanted to share about the aquarium for great things to do in Salt Lake City! If you’re looking for fun things to do in Salt Lake City, the Living Planet Aquarium is a great one to add to your list! Some of these are taken with my Canon and others are taken with my iPhone, I found it rather difficult to get great photos with my Canon in with the aquarium lights, I need more practice I guess!
