Thanksgiving is coming up quick and it’s the perfect time to make a delicious pumpkin themed recipe for the whole family to enjoy. This recipe is super easy with simple ingredients, making it great for baking around the holidays when you might not have much time. These muffins are perfectly moist and great for a snack or even a quick breakfast option. You can add in some chocolate chips or raisins for a little something extra, but this heavenly cinnamon maple glaze makes it the perfect treat already.
This recipe is my version of a fall themed chili with the sweet potatoes, but can be enjoyed during any time of the year. It’s perfect for a family dinner, pot luck, or meal prep. It can even be stored in a Zip lock bag and frozen for up to 4 days, then reheated for a quick dinner option on nights you don’t feel like or have time for cooking. *I haven’t tried this out, but if you do, let me know how it turned out in this recipe!

When I first converted to the plant-based vegan lifestyle about 6 years ago, and began experimenting with tofu, the first meal I made with it was scrambled tofu. I followed a very basic recipe I found online that tasted pretty good.
