When I was trying to come up with a name for these Nut Free, No Bake Fudgey Bars. But seriously, self control will be required in order to not eat the whole tray of these Sunbutter Fudge Bars in one go. The bottom is perfectly âbiscuityâ, the middle layer, fudgey yet soft, and the top contains a layer of decadent dark chocolate spiked with more Sunbutter. So, I had to start getting creative in the kitchen with nut free alternatives.
These Sunbutter Choc Chunk Cookies are made completely nut free due to my own ambitions to reduce the mass amounts of nuts one consumes when theyâre nât know if I overdid it with the nuts or I couldnât digest them properly from the get go, but 2 of my most recent Viome tests show that with the exception of almond milk I canât efficiently digest Almonds and therefore should avoid them. Theyâre soft, yet fudgey and every bite is laced with small chunk s of dark chocolate heaven. And one thing I learnt quickly was the need for the dough to have some chill time.

Once I was old enough to know better and realise the direct connection between the consumption of this anti nutrient food and the way I looked, felt and functioned on a daily basis, I turned to the kitchen and started experimenting with substitutions for refined sugar, gluten, animal products and even threw in a few superfoods I was coming across on the daily, all while satisfying my sweet tooth of course. I was getting brain fog, I found it very hard to get up in the mornings, no motivation to workout (coming from someone who used to run daily), my moods were up and down, I would react to soo many foods to the point where if we ate out one night the next day my whole internal system felt hot, inflamed and under attack, and not to mention the bloat (as pictured above) that made me look like I was 5 months pregnant. The MOST daunting part, was announcing to all of YOU, that Iâm no longer going to be Vegan and will be consuming things like bone broth, collagen, and a few other animal based proteins to assist in the healing of my gut. I truly believe there isnât just one set way to eat for all people, itâs so important to really listen to what your body is telling you and try to nourish it in the best way you can in order to live a healthy and vibrant life, free from inflammation and illness.
