Simple Saturday: French Ham & Cheese Sandwiches

My husband and I are spending about 8 days in Paris and our favorite Loire Valley town, eating, drinking and enjoying some R&R. The French ham and cheese sandwich typically has a hard farmers cheese, thick slices of buttery ham, butter on at least one or both sides of the bread, and maybe some cornichon pickles. The butter on one or two sides adds richness and acts as a sort of slightly salty glue to the sandwich, and it softens the bread a little bit. * Get some good salted butter (TJ’s sells French butter, but Kerrygold would also be tasty)

Introducing My New Diet!

Here at think fruitful, if you’ve been following along for even a short time, you may have noticed that I’m a big fan of fruit. Whether it’s a fresh North Carolina Pink Lady apple, a juicy summer watermelon or zesty blood orange, I think that fruit is an important part of enjoying food and life. So, I’ve put a lot of thought into this and decided to start eating an all-fruit diet. I’ll plan on spending my days peeling bananas and oranges, deseeding pomegranates and chunking up pineapples…because I’m guessing that it’s going to take a lot of fruit to keep me full most days.

Gluten-Free Scones

That’s why I was so excited to find this fab recipe for Gluten-Free Chocolate Chip Scones. It’s super easy and doesn’t even have sugar. Honey with the chocolate chips gives you just enough sweetness, and I’m starting to love the flavor of almond flour. Whether you’re gluten free or you have a friend or family member who doesn’t eat gluten, they’ll consider these a lovely treat.

My 10 Favorite Green Things to Eat Right Now

In honor of St. Patrick’s Day, I thought it would be fun to talk about some of my favorite green things to eat. Here are my 10 favorite green things to eat right now and why I love them (click or tap on the title for a recipe): They’re easy to cook and make flavorful (roasted with olive oil, salt smoked paprika) The ultimate topping with a punch of flavor (like on stir fry, noodles, salads, curries)
