This is another one of my easy Trader Joe’s meals! Everything can be bought at TJ’s (or Whole Foods! ) and can be made in 30 minutes or less. It’s one of those super easy meal bases that you can literally throw anything into. This time around I decided put my usuals into a baking dish with a little mozzarella, because a little melted mozz always makes things better.
Not that I didn’t take time before, but I started getting away from staging and instead was taking very simple clean shots, more for the purpose of IG. We had started the Clean Program at the same time and were desperate for recipes (this was “back in the day” when like paleo wasn’t a thing) and decided to start photographing our creations. I am going to be investing in a new set-up (apartment life is a challenge haha) as well as staging props and really start to play around more. Between working as a speech pathologist where I manage my own private practice, running this blog with my sister, and being a mom to an 8 month old, if I’m not organized my life pretty much ends up in shambles. I can do everything from pulling up our shared Google calendar (which I refer to constantly! ), using their meal planning tool to look up recipe ideas on AllRecipes, Pinterest or Tasty, creating grocery shopping lists that sync right to my phone, and using apps like Instacart to order groceries. And if I’m not in reach of the fridge, it’s voice activated! I can have her add items to a grocery list while I am thinking of them, she will give me a daily memo of anything I have scheduled for the day, and will turn on some tunes when I need to groove a bit in the kitchen.
Fettuccini, your favorite jar sauce and Trader Joe’s pre-cooked lentils (I got everything at Trader Joe I just added the lentils to the sauce in a pot and warmed them over medium low heat while the pasta was cooking. I love the added protein and fiber the lentils add to this dish to round it out. And if you’re not in the mood for pasta, this sauce would be delish with veggies mixed in.
