Leftover rice fried in olive oil with bok choy & herbs, baked with cheese & egg, and topped with copious amounts of hot sauce. Inspired by spanakopita & the not-exactly-tasty cheesy rice I would make as a child. We're finding ourselves unexpectedly busy and out of the house a lot this December. I don't think we'll even be doing a proper grocery trip because in the midst of it all, we're getting new appliances! I've been staring at a space about a foot wide next to the small refrigerator for years and I am SO EXCITED for the new one to fill it. More space for all my pickles and sauces and freezer broths, yay! I've been clearing out the bits and bobs in there so we won't have as much to transfer, and it's fun to see my brain pulling out dishes from childhood. Left to myself some afternoons and not allowed to use the stove, I would "cook" in the microwave. It was usually potato wedges topped with cheese, but at some point I decided to try it with leftover rice instead. I don't think I ever really liked it, but for some reason I would keep making it. Even though adding all the leftover produce sounded perfect to me while cooking, I still took my first bite of this breakfast bowl with a bit of trepidation. Date, Rye & Olive Oil Brownies from #GoodandSweet by @bybrianlevy Back in elementary school when Dominick's was still thriving in Chicagoland, I was obsessed with their bakery section. Palatable bagels, buttery "popovers" full of layers (basically croissants baked in muffin tins), and best of all, decadent and cloyingly sweet trays of chewy brownies topped with a thick layer of soft fudge. It was the only thing besides cereal that could get me to consume milk and that was probably why my mom deemed it an acceptable breakfast. Those brownies, these are not. Almost a dense cake in the best of ways and slightly nutty with olive oil bringing out fruity tones, these complex-tasting brownies are perfect for when my chocolate cravings hit hard! With Type 2 diabetes in the family, I've been aware of my sugar intake for as long as I can remember and am always trying to "healthify" my favorite bakes with fruit and whole grains since I tend to...consume things I like in large quantities...My efforts haven't been the most successful, so I'm super excited to bake more from this gem of a book! Something about the combination of dill and smashed meaty chickpeas makes it weirdly reminiscent of tuna. I'm honestly okay with that, because it's my favorite weather, but I'm starting to miss all the fresh-baked goodies!
