. A lot of people aren’t aware that you can cut a country ham in a prosciutto style. Most people, myself included, grew up with thick sliced country ham which can be pretty salty and little overwhelming on the palate. But when you cut it like this it takes the experience to an entirely new level. When I tell people that @stevecoomes changed my life when he introduced me to “hillbilly prosciutto” in December 2022 I really mean it. And pairing this thin sliced, smoky, fatty, salty, deliciousness with a high proof Bourbon, or Rye, just takes the experience to another level. I had a great time with @beamgeneration8 this weekend learning about his family’s connection with curing country ham and the similarity between that and Bourbon making. This episode will drop soon. . I had quite a few people asking me yesterday to post the video of @beamgeneration8 cutting into his cured ham. So here it is - the official first cut. I was standing across the table and could smell it almost instantly as soon he cut that first chunk off. And it smelled absolutely incredible!! I wish you guys could smell how awesome it was. . Have you ever done a Whiskey Ham Luge? No??? Well, I have. And it’s quite the experience for sure especially when it’s a delicious pour of high proof Booker’s that you’re enjoying off of that salty, fatty ham back. I got to spend the morning with @beamgeneration8 at his home in Bardstown this morning talking about all things country ham for an upcoming episode of The Bourbon Life Podcast and he shared the story of the Whiskey Ham Luge with me. And yes, not only did we talk about country ham but we also enjoyed sampling some of this amazing 19-month old country ham that he and his dad cured and smoked themselves in their smokehouse. And we paired it with a bottle of Booker’s that was barreled in 1990 that I just happened to be saving for a special occasion like this. What an awesome combination! We had such a great time and I learned so much about country ham from him. To say that he and his dad are passionate about curing country ham is a definitely an understatement. . I know there are a lot of whiskey purists out there who are vehemently opposed to flavored whiskies in any form. I will admit that I was one of those purists until I discovered the versatility that a flavored whiskey can offer, especially for fun cocktails. . I want to give a HUGE shout out to @greenriverdistillingco for sending us this bottle of their recently released Full Proof Bourbon. This release comes in a 117.3 Proof but as we discovered on a recent Episode of The Bourbon Life Podcast it might prove to be a little dangerous because of its easy drinkability. I’ve always been a big fan of Green River even when they were just sourcing out stuff to other brands and didn’t even have their own line of products. . My most recent shipment of the Barreled & Boxed program from @beamdistilling included this 375ml Distillers’ Share #05. This release is part of the experimental line from Beam and this particular expression focuses on an extended fermentation period of 5 days, which is 2 more than the normal 3 that Beam employs. It also comes in at 6 years old and 108 Proof. I always enjoy seeing what @beamgeneration8 has put together in these Distillers’ Share releases and I can’t wait to see how the extended fermentation impacted this one.
