I'm obsessed with this flavor combo. This spring I went to the @sweets_and_snacks_expo and happened across the Boyer's Candies booth. Famous for their Mallo-Cups, they also have a candy cup they call a "Smoothie." It's a peanut butter cup center coated in Butterscotch. It's one of the most amazing things I've tasted lately. So today I played around with a Peanut Butter Butterscotch Chip cookie recipe. It still needs some work. It doesn't spread as I'd like. And I may need to resort to a different peanut butter. On My To-Do List- Turn this gluten-free, egg-free peanut butter bread into muffins. I've made this bread multiple times. I even have directions on my website on how to hypothetically turn them into muffins. However, I've never tried it myself. Of course, in my household of 2, the question always becomes "what do I do with all the muffins?" I work from home and my husband is still on summer break. We don't have co-workers to share things with. However, our church is soon taking part in a community wide rummage and bake sale. Proceeds will go to Soaring Unlimited Haiti, which is a non-profit that helps meet health needs in Haiti. Including a recently constructed maternal health center. So I think I'll make a batch and donate them to the sale. It's a double win- It raises money for women's health, and it allows shoppers to have safe, gluten free baked good options. Are You There? It's Me, Margaret I've been on Instagram for quite a few years. I used to really be better at the "Insta" part. The sharing of am image in the moment. I've lost that. And in relation, kind of prevent sharing more of myself. So I'm going to attempt to take part in @lashawnwiltz August photo challenge. Today's prompt is "5 Things About Me." Here goes. 1) I've been married to the same wonderful man for the past 21 years. Some days it feels like it can't possibly be this long. How is it that I'm this old? That I'm the "adultier adult."? Then again, I'm the eldest daughter, so I've always been the adult. IYKYK 2) I live in Michigan. I have all my life. And to be honest, I took its beauty for granted. When I was a kid I thought this state was boring. Then 21 years ago I had the chance to leave it all and move to France. Due to finances and family health issues, I didn't end up going. And now I can't imagine living anywhere else. Follow @frommichiganwithloveblog for MI travel ideas 3) I am my biggest critic. Then again, aren't we all? I've been doing this blog thing for 9+ years. And i still struggle with taking photos. I don't know if that anxiety will ever go away. Thanks to @canyonglutenfree for always believing in me. 4) I am a cookie monster. Sure, brownies are good. And cake and frosting are fabulous. But there's nothing better than a chocolate chip cookie. True story- one of my cookie recipes won a recipe competition 5) I like to read. I loved it as a kid. I'd spend Christmas break holed up in my room, just reading all day. Then as an adult I got away from it. Told myself that I could be doing "more constructive things with my time " Tried to always be busy. And worked myself into the second nervous breakdown of my life. Friends, we were not always meant to be busy. The "hustle" culture isn't doing us any favors. In a world that's telling us to be more, allow yourself to simply be. And that's enough. How Many Times Do We Have to Say This? "Dr" Josh Axe has a Reel stating that a (20 year old) "study" of 17 people showed that people with Celiac Disease can eat sourdough. He specifically says the word Celiac. He shows rashes that look in his video that look like Dermatitis Herpetiformis, which is the skin manifestation of Celiac Disease. He's wrong. Want to know how I know this? Because GF Watchdog has tested wheat based sourdough, from multiple brands all claiming the same thing. Now what she found? Gluten PPM WAY over 20. In fact one of the tested at 104,000 parts per million of gluten. Don't just take my word for it. Good research, with humans, involves a much larger sample size. 2) Dr Josh Axe doesn't specialize in Celiac Disease. His degree is in chiropractic care. When it comes to Celiac Disease research, I place my faith in those who spend their lives on this disease as experts to be listened to. 3) The first thing you see when you go to his website is very expensive supplements. Seriously, that should be a red flag for any doctor. 4) I found the 2004 study Dr Axe is referencing. I will admit that I'm not a scientist. But the means of testing study participants after ingestion of sourdough was not testing for Antibody markers. Nor was it endoscopy. It was a urine test for "intestinal permeability." https://www.ncbi.nlm.nih.gov/pmc/articles/PMC348803/ Lastly, PLEASE be careful who you get your information from. I'm sure you'll have friends and family who will send you this Reel and try to tell you that you can eat sourdough. I know it's infuriating. But try to keep your calm, and kindly explain that this "Doctor" is at best misinformed. Share with them the facts from GF Watchdog. We may get tired of educating, but we're making a huge difference each time that we debunk myths.
On The Search for GF Fried Fish We're heading to Ann Arbor, Ypsilanti and Saline today for a much needed road trip. My husband returns to school on the 12th, and we're trying to fit as much "fun" into our schedule as possible. I"ve previously shared on my blog post about Michigan Fried Fish that Salt Springs Brewery has gluten free fish, so we're planning to stop there for lunch today. I Made This Again This Week If you've never had a galette, it's like a pie. Except that you don't need to transfer the dough into a pie dish, nor do you need a top crust. You simply fold the edges of the dough up over the filling, and bake. It's incredibly easy and delicious. I may be biased, but I do believe that my gluten free pie crust is pretty fantastic. My non-gf husband loves it, too. I make it with Cup 4 Cup brand flour, which contains milk powder. I also use an egg yolk in pie crust. When my husband was in Nice, in the south of France, you could find this grain free and gluten free flatbread at open air markets, topped with an assortment of accoutrements. Socca is made with with chickpea flour, water and salt. The trick to the perfect batch is a hot preheated oven, and pan. It can work great for a small pizza crust.
