Serve in a cup and let everyone choose their own topping or if you want to leave the corn on the cob throw it on the grill then brush it with butter, mayo, vegan cheese, and chile powder.

Heart-Shaped Vegan Chicken Nuggets

My kids aren’t vegan, so this recipe for vegan chicken nuggets needed to be good, and I mean really good for them to like them. know what is that makes kids like ketchup so much (wait a minute of course I know, SUGAR!), but if they could put ketchup on everything they totally would. I’ve been looking for a good low sugar or sugar-free ketchup for a while This one has satisfied my kids’ picky palate, plus its keto certified, paleo, whole 30 approved, vegan, and gluten-free.

Vegan Birria Tacos

These spicy and fragrant vegan birria tacos are going to change the way you eat tacos forever. A mixture of shredded oyster mushrooms and jackfruit is simmered in a sauce of dried chiles, spices, and roasted tomatoes, then served in warm corn tortillas. To make this vegan birria I decided to substitute the meat with a mixture of jackfruit and shredded oyster mushrooms, but you could do all mushrooms or all jackfruit. mushrooms- maitake mushrooms will also work for this * Dried Chile Ancho, guajillo, pasilla- are commonly find in grocery stores in the Mexican section

Cantaritos Locos

Fresh orange, grapefruit and lime juice are mixed with tequila and grapefruit soda, poured over crushed ice, then topped with orange, grapefruit segments, and pineapple. It is typical in town celebrations and fairs like the “ El dia de los Cantaritos” June 24th and 29th, and Feria Nacional del Tequila on December 13th. The best tequila for this is white tequila for its mild taste that lets the fruit juice shine through. For an extra kick I’m using chamoy to line the cups then dipping them in the * chile powder, but you can use lime juice to do this as well.
