Do you remember the 21st night of September…when we shared a super easy breakfast idea? 🥲 Zucchini, Egg, & Feta Skillet that’s only 4 ingredients and takes just 15 minutes 🍳🥒👇 1. Wash and slice a zucchini into thin rounds. Add them to a skillet over medium-high with olive oil, salt, & pepper and grill for about 3 minutes on each side. 2. Crack 2 eggs into the skillet and add your herbs of choice (we used oregano, thyme and herbes de Provence are also good options). Add salt & pepper and crumbled feta cheese on top 🤤 3. Cover and cook on medium heat for 4 minutes or until the eggs are cooked how you like them.
