Before sous vide machines and slow-cooked eggs, Japanese cooks used to pile eggs into a basket and lower them into the abundant hot springs around this volcanic archipelago. Maybe I'm a bit late to the party, but if you haven't tried Mazesoba (soupless ramen) yet, you're missing out! Despite the name, this dish uses ramen noodles, not buckwheat soba. "Maze" means "mixed" in Japanese, so instead of a broth, the noodles are coated in a fragrant taré made with scallions and ginger. I topped mine with spicy pork, scallion greens, nori, toasted sesame seeds, and an egg yolk. When you mix it all together, it’s like Asian pasta with a rich, flavorful sauce.
