I’m writing this down on the blog in hopes that someone will hold me accountable for it. * 1 post per week if I’m busy, 2 posts per week if I’m not Grow my follower count to 10,000 on Instagram I spent a great deal of 2018 learning and growing as a person, as a foodie, as a photographer and as Barefootkimtessa. This year, I’m going to take this blog and my Instagram even further.
For those of you who may not know what The Whole30 is, I’m basically cutting out all dairy, grains, alcohol, legumes, and unnatural sugars out of my diet for 30 days. I’m currently on Day 4 of The Whole30. I’m remembering how much I genuinely like to cook and how exciting finding and correctly executing a new recipe can be. and I will absolutely want some chocolate by day 20, but I’m excited for this month long journey.
Reflecting on last summer, I told myself I would be healthier this year and not eat chicken fingers every day like I did last year. It was only fitting that I consume my favorite chicken fingers on national fried chicken day. My crew wanted chicken and although I had just eaten it and easily could’ve eaten ANY OTHER type of food, I chose to go to Sticky’s with them. Go try Sticky’s Chicken Fingers!
For the past year, I’ve been running an Instagram account dedicated to taking photos of my meals called @barefootkimtessa. Although taking pictures has been fun, I’m starting to feel like I need something more that can’t be captured in just one Instagram post. I’ve been having such a great time exploring new places to eat and new parts of the world with some of my favorite humans that I think it would be fun to share my experiences with you all as well. My father was a caterer for a good portion of my life and he sometimes still makes meals as if he’s catering for a party of 100 (even when it’s just a quiet Sunday dinner of 4).
