Drain the tofu, and add to a blender/food processor along with all other ingredients (garlic infused oil, smoked paprika, nutritional yeast, salt, apple cider vinegar, and black pepper). Blend until well combined. You may need to add 1-2 tbsp of water to help it blend and thin it out, though you don't want the dip to be too watery in consistency
Equally as important, you donโt want any chunks of pumpkin as the gnocchi dough will need to be as smooth as possible (pick out any visible pieces of solid pumpkin). Dust a flat surface with gluten-free flour, and then start to combine all of the mashed pumpkin with the remaining flour until a dough is formed Continue to knead until no loose flour remains (you may need to add more flour if the dough is still sticky). Continue to cook until sage starts to fry/crisp, then add in a few tbsps of the reserved water (to thin out the sauce)

TACO SALAD WITH MUSHROOM/QUINOA โMEATโ AND CILANTRO LIME DRESSING ๐ฎโจ๐ฑ (low fodmap, vegan, gluten free, nut free) - hereโs me spending 15 minutes trying to think of a clever taco tuesday caption only to realize its wednesday ๐where has the week gone? ๐ฑ this taco salad turned out so fresh, crunchy and filling! the โmeatโ is a great soy-free meat substitute and is so easy to make โฅ๏ธ while this recipe does contain corn and avocado (typically higher in fodmaps), it only contains a fodmap safe portion each ๐ค remember, its low fodmap not no fodmap! diversity is key for a healthy and balanced gut microbiome โจ

GLUTEN FREE & VEGAN CHEESE BUNS ๐ฑ(low fodmap, gf, vegan) i used @gfblogger โs 3 ingredient dough ball recipe, but used plain almond yogurt in place of regular yogurt, stuffed them with @kokodairyfree vegan cheese and brushed them with garlic infused oil when hot out of the oven ๐คฉ topped with chopped basil and sprinkled with my 2 ingredient vegan parmesan recipe (can be found on my blog)!
STICKY PEANUT TEMPEH BOWL ๐ฅข(low fodmap, vegan, gluten free) - have you tried tempeh? itโs one of my favourite vegan proteins and has such a nice dense โmeatyโ texture which a lot of people prefer to tofu! the key to good tempeh is to steam the tempeh before cooking with it - this removes the โbitterโ taste from the fermentation/preservation process that scares a lot of people off ๐ค Served with rice, salad, julienned carrot, cucumber ribbons, sliced radish, and topped with spring onion and sesame seeds ๐ฅโฅ๏ธ recipe on the blog!
