Lemon Lush Cake š This Lemon Lush Dessert is light, fresh, and decadent. Itās made up of a buttery shortbread crust thatās layered with lemon cream cheese filling, homemade lemon pudding, and whipped cream. Ingredients Needed: Cream Cheese Layer * Cream Cheese: be sure to bring the cream cheese to room temperature for a completely smooth texture. * Powdered Sugar: sweetens the cream cheese filling and gives it more structure. * Lemon Juice: use freshly squeezed lemon juice for the best flavor. Lemon Pudding * Whole Milk and Granulated Sugar: a sweet and creamy base for our lemon pudding. * Eggs: adds richness and gives the pudding its classic creamy consistency. * Cornstarch: helps thicken the pudding. * Lemon Zest and Lemon Juice: gives the pudding an extra intense lemon flavor. Remember, freshly squeezed is the way to go! * Vanilla Extract: adds flavor depth and warmth to contrast the brightness of the lemon. * Yellow Food Coloring: food coloring is optional, but it does give the lemon pudding that bright yellow color. 1. Prep the crust: In a bowl, combine flour, cubed butter, and sugar until crumbly. Transfer the mixture to a 9Ć13ā³ baking dish, press it into the bottom firmly, then bake until dry looking on top. Cool completely before adding the cream cheese layer. 2. Make the cream cheese layer: Beat the cream cheese in a mixing bowl until smooth, then add in the powdered sugar and lemon juice. 3. Make the lemon pudding layer: In a saucepan, whisk together milk, sugar, eggs, cornstarch, and lemon zest. Cook over medium heat until the mixture comes to a low simmer. Cook and stir until thickened, then add in lemon juice, vanilla, and optional food coloring. Remove from the heat and strain into a bowl. Cool to room temperature. 4. Assemble: Spread the cream cheese mixture over the cooled crust in the pan, then add on the lemon pudding layer. Spread evenly. 5. Chill: Place the Lemon Lush into the fridge and chill until completely cold. 6. Top it off: In a bowl, whip together the cream, sugar, and vanilla until stiff peaks form. Authentic Gluten Free Argentinian Empanadasš These empanadas, inspired by Buenos Aires, follow a traditional Argentinian recipe but opt for gluten-free flour in the pastry. Enjoy all the Latin flavor without any wheat. Each bite of these savory Argentinian empanadas captures the essence of the neighborhood. While it takes two to tango, devouring all these gluten-free delights requires only one. Making the filling: Chop the onion and bell peppers into very small pieces, and then heat the oil in a frying pan and sautĆ© until soft. Add the ground veal and all the spices. Cook until the ground veal is well done. Add the tomato sauce and stir. Add the chopped hard-boiled egg whites, stir, and leave to cool. Making the dough: In the bowl of a stand-mixer, combine the flour, eggs, oil and white wine. Mix using the dough hook attached for about 3 minutes until the dough comes together. Take the dough and knead by hand for a couple of minutes. Wrap the dough in cling film and let it rest for about 1 hour. Roll the dough over greaseproof paper (if it sticks, sprinkle some flour). Shape the empanadas using a round cutter, add a spoonful of the filling and fold the empanada disk sealing the edge with your fingers. INGREDIENTS: ā¢ 2 cups diced apples. ā¢ 1 teaspoon lemon juice. ā¢ 1/4 cup brown sugar packed. ā¢ 2 tablespoons granulated sugar. ā¢ 1 tablespoon unsalted butter, melted. ā¢ 1 1/2 teaspoons all purpose flour. ā¢ 1/2 teaspoon ground cinnamon. ā¢ 1/8 teaspoon fine sea salt. ā¢ 2 unbaked pie crust dough. ā¢ Egg wash (1 egg whisked with 1 tablespoon of water). ā¢ 1/4 cup caramel sauce. INSTRUCTIONS: ā¢ In a large bowl, toss apples with lemon juice until combined. ā¢ Add brown sugar, sugar, melted butter, flour, cinnamon and salt to apples. Stir until combined. ā¢ In a medium bowl, mix together all topping ingredients. ā¢ Line a large baking sheet with parchment paper. ā¢ On a lightly floured surface, roll pie dough to 2inch thickness. ā¢ Cut out 15 5-inch blossom shapes, re-rolling dough as necessary. ā¢ Lightly mark a 2-inch circle in the center of each blossom.
