this tomato soup recipe is perfect to make on a cool night (shoot, i will eat tomato soup anytime of the year! ).
bonus points: this recipe freezes great, so i always portion it out into individual servings that are easy to pop out of the freezer on nights i don't feel like cooking!

Heat large soup pot to medium heat and add olive oil.
Use an immersion blender (or high-powered blender) to get soup to desired consistency (I like some bigger pieces of tomato).
