Grape Pear Appetizer

The December Recipe Redux theme was a fun one: Cook from a favorite cookbook and revamp a recipe to be your own healthy version. My intern, Tomi, and I were swamped in November, so we skipped last month; but this month we were excited by this theme, to work together in the kitchen, AND to use my light box. We started out thinking we would need some pears for practice, but then we just kept getting more creative with our methods, stems, and ended up creating a whole nice appetizer board! He agrees this is a decoration only recipe; but the joy it gave Tomi and me in the kitchen, every step of the way, really was a great way to end our time as intern and preceptor – what a true JOY it was to work with an intelligent upcoming dietitian.

I also saw nut-based coffee creamers, plant-based burgers, non-dairy yogurts, lots of dehydrated fruit snacks and puffed veggie snacks, and a variety of nut milks. Again, plant-based was highlighted, like high-protein pasta made from lentils and chickpeas, and different seed-based meat alternatives. Kind’s nut and fruit-based snacks, and they have a new line of bars for kids that came out about six months ago. I also saw a few people walking around with gorgeous Siggi canvas totes that did not look at all like something you’d get for free at an Expo

FNCE Recap Part 1 – The Debates

The key message I took away from this debate is that intermittent fasting has shown some promise for weight loss, health, and longevity, but we need more research to better understand the benefits and risks. The other session of note that I attended was a debate about conventional weight loss/management versus Health There was some discussion about why diets fail and whether or not intentional weight loss can be sustained long term, along with a bit of debate over whether measures like weight and BMI are reliable predictors of disease. Frankly, evidence exists supporting both the traditional weight loss approach and the HAES approach to health.
