Spinach falafel and flatbreads

I love how quick they are to prepare, the fact you can make a meal for four with one tin of chickpeas never ceases to amaze me. Serve with homemade flatbreads, hummus a big green salad and you have a feast that’s sure to please. The falafel take just over 30 mins to prepare, so if you don’t have time to prepare the flatbreads too, just grab some ready made pitta or wraps I highly recommend investing in a cast iron skillet if you don’t have one yet.

Salted caramel tarts

, they’re the perfect dessert for when you want something sweet yet light. Little tarts are always a favourite of mine as they’re just the right size for one portion and make the perfect after dinner dessert when you want a little something sweet without being too heavy or rich. Spinach pesto pasta with almond parmesan

There’s some dishes that I make every single week and this spinach pesto pasta is one of them. The recipe makes enough for a small jar of pesto and almond parmesan, so you’ll have plenty left over to add to soups, stews, sandwiches, burgers, you name it! It’s one of those things that when you’ve made it once, you won’t wanna go back to the store bought stuff. I added some peas during the last few minutes of the pasta cooking, but feel free to sub for your fave greens, broccoli florets, asparagus or green beans would be a delicious twist!

Veggie gyoza (dumplings)

Mushrooms, carrots, sprouts and cabbage feature in the filling so although they look like a treat, you’ll benefit from a whole heap of veggies if you try this recipe! You’ll have enough dough for at least 60 dumplings with this recipe, so feel free to half it if you don’t love gyoza as much as me. xoxoxo 1 cup brussel sprouts (or sub more cabbage) Prepare wrappers by mixing flour, cornflour and salt in a medium size bowl. Heat frying pan with remaining oil and fry gyozas for 4-5 minutes, until brown at the edges.
