Cerveza Chicken Enchilada Casserole (Slow Cooker)

My first blog post update is this Cerveza Chicken Enchilada Casserole for the slow cooker. Next, start layering the casserole; spoon ~1/2 cup enchilada sauce in bottom of slow-cooker, followed by tortilla chips, then ~1/3rd of the chicken, and finally some of the shredded cheese. It was just too bad the “mild” enchilada sauce I bought was actually a lot spicier than I had expected; needless to say she didn’t try it. While I enjoyed my meal with a fork, topped with avocado slices,  my carb loving husband used the enchilada as a dip and ate his with more chips.

You know those times when your kids devour a specific food, and you get all excited so you go out and buy a whole bunch of said food, only to realize that your child was really only into that food on that particular day? After the five minutes is up, mix the bananas and the sugar/butter mixture into the large bowl. ** If you follow a Gluten Free of low FODMAP diet, you can use brown rice flour. Slow Cooker Broccoli Beef with Carrots

I always have trouble with rice, but thankfully I rarely even eat the rice when I’m eating Chinese food. Today’s recipe is definitely saucy, especially if you’re like me and you don’t use rice to soak up all that sauce, but I didn’t mind because I knew it was at least a bit lower in sodium compared to others. Add steak, broth, soy sauce, garlic, oyster sauce, brown sugar and sesame oil to a slow cooker. Slowly stir the cornstarch mixture into the slow cooker along with the broccoli and continue cooking for an additional 30 minutes (or until sauce is thickened a bit and broccoli is tender)

Sweet Potato Soup with Cashew Coconut Cream

I often find myself buying the large cardboard containers of simple soups; like butternut squash or tomato, and then adding more vegetables to it, or even grilled chicken. Don’t get me wrong, I offer it to my kids every time I make it, but they still take their dad’s side; “no soup for me! Add coconut milk and cashew butter, stirring well to combine. Meanwhile, make cashew cream; In a small bowl, combine yogurt, cashew butter and coconut milk.
