My first blog post update is this Cerveza Chicken Enchilada Casserole for the slow cooker. Next, start layering the casserole; spoon ~1/2 cup enchilada sauce in bottom of slow-cooker, followed by tortilla chips, then ~1/3rd of the chicken, and finally some of the shredded cheese. It was just too bad the “mild” enchilada sauce I bought was actually a lot spicier than I had expected; needless to say she didn’t try it. While I enjoyed my meal with a fork, topped with avocado slices, my carb loving husband used the enchilada as a dip and ate his with more chips.

I always have trouble with rice, but thankfully I rarely even eat the rice when I’m eating Chinese food. Today’s recipe is definitely saucy, especially if you’re like me and you don’t use rice to soak up all that sauce, but I didn’t mind because I knew it was at least a bit lower in sodium compared to others. Add steak, broth, soy sauce, garlic, oyster sauce, brown sugar and sesame oil to a slow cooker. Slowly stir the cornstarch mixture into the slow cooker along with the broccoli and continue cooking for an additional 30 minutes (or until sauce is thickened a bit and broccoli is tender)
I often find myself buying the large cardboard containers of simple soups; like butternut squash or tomato, and then adding more vegetables to it, or even grilled chicken. Don’t get me wrong, I offer it to my kids every time I make it, but they still take their dad’s side; “no soup for me! Add coconut milk and cashew butter, stirring well to combine.
