Grilled filet mignon with peppercorn sauce (AKA steak au poivre) is one of the most luxurious meals you can prepare in less than 30 minutes. I like using kosher salt and course ground black pepper, because both provide a little texture when the crust forms. This recipe for Lobster Thermidor is my interpretation of the French classic with a creamy gruyere cheese sauce. There are some haters out there who insist that seafood and cheese don’t mix, but come on…lobster mac and cheese is so a thing and sorry to break it to those folks, but so is lobster Thermidor. You don’t want the meat to cook all the way through, because it’s going to cook more in the final step. Add a sprinkling of grated parmesan cheese and bake/grill for another 10 minutes, until that cheese bubbles.
This is a grown-up version of a grilled tuna melt sandwich with a cornichon caper aioli that will knock your socks off. Fast forward to today, and my grilled tuna melt sandwich game is way better and way more delicious. I like to use my Aspire gas grill, instead of charcoal, because the cook is so fast, there’s no need to waste a bunch of coals. Top the grilled tuna melt sandwich with fresh peppery arugula and some fresh celery leaves.
