Chickpea “Tuna” Melts

However, once going vegan I heard about the “chickpea tuna” craze. ” recipes, including no “tuna” chickpea casserole  and vegan “tuna” pasta salad . I post so many chickpea based recipes because I know not everyone is a fan of other vegan proteins like tofu or tempeh. You can also add other veggies like carrots or whatever other items you like to add to your chickpea tuna recipe.

Lemon Asparagus Risotto

I have a couple of other risotto recipes on my blog, but I wanted to make one inspired by Spring/Summer. I have been working on an air fried veggie post (coming soon, still have a few veggies left to conquer), but I also wanted to try something different! Before I went Vegan I would go to an Italian place often which had this lemon zest asparagus pasta. I used the Violife block and I think it’s so crazy how it’s shaped like an actual block of parmesan.

Peanut Free Sesame Noodles

Try out these peanut free sesame noodles made with sunflower butter. Many sesame noodle recipes contain peanut butter which I obviously cannot eat. When I went Vegan I only ate soy nut butter, but a year later I got into sunflower butter. Sesame noodles can be made with rice noodles, soba noodles, etc.

Breakfast Quesadillas

These delicious and easy vegan quesadillas include tofu scramble, Dr. Praeger’s vegan sausage, spinach & cheeze. These quesadillas include tofu scramble, spinach, vegan cheese & the new Sunday Funday Veggie Sausages by Dr. Praeger’s. For comparison, I checked out a website for a very popular pork sausage product. Since Dr. Praeger’s sausages come in round patties, I chopped them up when they were done cooking and added them to the scramble.
