SOFT BAKED PUMPKIN CHOCOLATE CHUNK COOKIES

If you’re a soft baked cookie fan, these soft baked pumpkin chocolate chunk cookies are going to tickle your fancy. As someone who loves to cook and bring homemade treats to holidays and events, I don’t mind when people ask me what’s in the food I made! I actually think it’s awesome when people are genuinely interested in what they’re eating and are taking their health into their own hands. Even if you’re not a vegan, you can still eat the vegan options and love them because they’re yummy.

SAVORY SQUASH PASTA

This sauce is super light, creamy, and indulgent without the heaviness of a mac and cheese or thick pasta sauce. So instead of having to pick or cooking them in a similar way, this sauce incorporates the squash in a different way so we can eat our squash and have our sweet potatoes too, without feeling like we’re eating too much of the same thing. The one thing I will say about the sauce is that if you use fresh butternut squash and cut and roast it yourself, it will definitely taste more fresh and potent. It’s perfect if if you’re making this pasta and you want the fall flavors to really stand out.

I can’t get enough of apple season, and this easy apple cinnamon compote is everything you need on a perfect fall day. This recipe truly doesn’t need much explaining because it’s super simple, quick and easy. They’re the perfect snack to prepare for a long day, a hike, or just to eat because they’re delicious. Once they’re soft enough to eat, you can uncover the pan and let all of the juices at the bottom cook down and absorb until you’re left with a ooey-gooey healthy apple compote.
