So I decided to figure out if I could make a version in the crock pot that would be easy, delicious, affordable, and lightened up a bit. However, DH and I are partial to some additional flavors on our sandwiches, so I like to make a blue cheese and celery relish to complete the buffalo chicken wing experience right in the sandwich! After cooking the chicken, you will find that there is a good bit of liquid in the crock pot, so just remove the chicken pieces to shred them in a bowl (use two forks), and then add enough of the liquid from the crock pot to make the shredded chicken flavorful but not overly wet.
