Vegan Mexican Albondigas Soup

In a small bowl combine 1 tbsp ground flax and 2 tbsp water, mix with a spoon then set aside for 10 minutes. To the mixture add chopped mint, diced tomato, all purpose flour, cooked rice, ground flax mixture, dried oregano, salt and pepper. Once the “meatball” mixture has chilled in the fridge take out and bring a large non stick pan over medium heat. Add 1 tbsp oil to the pan and begin to form your meat balls by scooping a heaping tbsp of mixture and form them into balls.

Perfect Matcha latte

If more people talk about it, the more likely we could all help one another in finding solutions in how we can lessen this terrible mental illness that takes a toll on ones every day life. There are a few key things I do daily to help reduce my anxiety…and one of the major ones is ditching coffee and consuming matcha instead. I always use a plant based milk because I love the creaminess it adds to the latte. Typically I use 100% pure maple syrup or coconut sugar, if I want opt out from using a processed sugar I will use a couple medjool dates!

To the pot add curry paste, water, ground turmeric, soy sauce and  both cans of coconut milk; shake the cans before opening… ( if there is some separation in the coconut milk, that is okay, scoop everything into the pot, the hard coconut milk will melt.)Bring to a boil, stirring to ensure everything is well incorporated.
