Perfect Blackberry Cobbler (family favorite!)

Perfectly sweet and tart, with a golden biscuit topping, it’s the ultimate easy dessert. Plump, juicy, and the perfect mixture of sweet and tart, these berries are amazing on their own (or whipped up into a blackberry mojito!), but truly are at their best when baked into a homemade blackberry cobbler. Serve warm and top with vanilla bean ice cream (or go for my FAVE, bourbon vanilla no churn ice cream!). This easy blackberry cobbler dessert is just begging to be served at all of your summer gatherings, and I promise you, you won’t regret making it!

Cheesy Potato Casserole (make ahead!)

From what I can gather, the “funeral” part of the name comes from this side dish being a popular dish to serve at a post-funeral lunch or wake, as they’re Let the baking dish sit on the counter while the oven preheats, add the topping, and bake as directed. You may find you need to add an extra 10 minutes or so if the dish is still pretty cold when you add it to the oven. This recipe, in it’s traditional form, uses cream of chicken soup, but I’ve added an alternative version (right below the recipe card) that uses NO “cream of” soups.

Fail-Proof Roasted Corn on the Cob (family favorite!)

Everyone has their favorite way of cooking corn on the cob… and while I love a great grilled cob, sometimes the weather doesn’t cooperate, or I just don’t feel like firing up the grill. Plus, as a bonus, I like to roast a bunch of corn, cut the kernels off the cob and freeze it so I can enjoy summer corn on the cob year-round. When you have two layers of corn ears in a pan, when turning the ears, make sure to rotate the bottom ears to the top and vice versa to make sure all the corn is evenly roasted. The next time you have a hankering for a fantastically sweet and juicy corn on the cob, instead of cooking them your usual way, give this super easy oven roasted method a try!

One Pan Creamy Garlic Chicken Breasts (Quick & Easy!)

Dredging the chicken in a bit of flour helps give it a golden “crust”, and when you add the chicken back to the pan with the sauce, the flour helps thicken up the sauce. I love versatile recipes, and this creamy garlic sauce is a great base to add other flavors to! Making a pan sauce is my favorite way to make a sauce because you don’t have to dirty another pan! This pan sauce method can be used to make just about any pan sauce you want!
