On medium-high heat, place the olive oil and ground turkey in a large skillet.
Line the potatoes on the baking sheet (i used 2 sheets), and sprinkle the salt, pepper, and paprika over them evenly.
In a food processor or blender add in the peeled and seeded avocado, jalapeno, cilantro, garlic, white vinegar, salt, and water.
Place the sweet potato rounds on a plate, and layer with the turkey filling, and avocado sauce.
