Berry Coconut Parfait

Ingredients: 1 cup pecans 1/4 cup dates 1 tsp of cinnamon 1 can of coconut milk (overnight cream consistency) 1 tbsp maple syrup 1 cup blueberries 1 cup strawberries 3.Divide crumbs into the mason jars, top with the coconut cream and add the strawberries, blueberries on top. Place the berries, serve the coconut cream on top and drizzle maple syrup and crumbs.

Egg Salad

Boiled Eggs Dijon Mustard 1 diced Avocado 3 diced green onions 2 diced celery 1 tbsp of paprika 1 tbsp of coconut yogurt Lemon juice Boil, cool and peel the eggs and place into a salad bowl. Add finely chopped celery, green onion and avocado. Add the dijon mustard, paprika, salt, pepper, coconut yogurt and lemon juice.
