Father's Day Weekend I decided to fire up the smoker. I slathered my handmade cowboy rub on a slab of salmon and Boston butt (or pork shoulder for the unfamiliar). Brushed some Maple Syrup on the fish. Smoked the butt for 8 hours and Salmon for around an hour at 250 F. Four yolks, two whites, one pound flour, a quarter of a pound butter, one pound sugar, two spoons rose water, a little mace, baked in tin pans. I believe that the point of these butter drops is to look like melting butter. With these points, I changed the temperature to a happy 375 F. Melted sugar will give the effect of a caramel bottom with an almost oatmeal consistency on top of the butter drops. Mace isn’t the most common spice found in most home cook’s spice cabinets.
