Seriously after all the rich, stews and meat dishes we eat all winter in France, it feels good to move your body in the sunshine! Most of the French people, I know are avid hikers! Plenty have done part of the St. Jacques de Compostelle hike which runs from France into Spain, it’s about 930 km 😮 I haven’t yet because there are SO MANY amazing hike trails near us in the Massif Central, which is a huge plateau in the south of France. The first photo was from the Aubrac Plateau, the second a video from the Gorges du Tarn aka the French Grand Canyon, the poppies photo is from a hike to the remains of a castle where one of the French popes was born, the next photo is Monteferrand the castle previously mentioned, the last photo is a Roman bridge that we found in the woods, the last is Cascade du Deroc - a waterfall on the Aubrac Plateau! Of course the #1 one on my list is about food so let’s get into it: Enjoying the spring cheeses. There is definitely a difference in the taste between the cheese produce doing during the winter and the cheese produce during the spring. This makes complete sense because in the winter time the cows and goats and sheep are eating hay that’s been stored stored and dried and in the spring time they’re out in their pastures eating all the fresh green grass and flowers. In the SPRING we are obsessed with goat cheese and rightly so as it comes from a cheese producer about 15 minutes from our house. Not to go off on a tangent but one year my bonus daughter worked for them for a week and had so much fun feeding the baby goats. My kids and I were definitely jealous, since baby goats are so adorable!
