Who else can’t say no to tacos of any sort? My only regret is thinking that those hard corn shells were the right way to eat them until I got to college and had the real deal. I love learning about other people’s simple pleasures- the theme of today’s #ecsqc. It reveals how similar we all are in the things that bring us joy. Mine is definitely the first bite after baking something yummy.. particularly something flaky and buttery 😆. #eatcaptureshare asked us what our morning rituals look like.. mine aren’t elegant or quiet or serene.. my boys are up at 6.30 am every morning and the breakfast requests begin almost immediately. When I don’t have time to make them or myself something involved, sourdough toast always saves the day. It’s part of our daily mornings together and I’m grateful for it. Sometimes i bake at night and get to cut into a new loaf first thing in the morning. Any baker will tell you this is one of their favorite parts of baking- seeing whether you got it all right. Bread - ‘aysh (life) in Arabic- is an essential part of part of our mornings, and an essential connection to our farmers and our homelands. That something so essential that revolutions have been fought over it has become a source of harm to people’s bodies shows us the double edged sword modern industrial agriculture has become. Nyc is the heart of the pandemic, and things here are unlike I’ve ever seen in my 30+ years of living here. I went to a Middle Eastern market yesterday to pick up dried limes and everyone, the customers and the employees, just seemed so happy to be there- to be able to engage with each other momentarily, to joke about the quarantine, to buy a treat their kids like. Ny’ers are infamous for their abruptness and their rushing- it’s always go, go, go, but this is the first time we are taking it slow and being present in the little moments that make up the day. It’s sourdough monthly challenge week and we had our hardest month ever with the chosen theme of Bread Art. Initially inspired by all those garden focaccias on IG, mgracebakeshop and I thought it would be fun to extend the challenge to any kind of beautiful bread. I made these #sourdough crackers using blondieandrye’s sourdough matzah recipe. She scored it so beautifully and I was mesmerized. The formula she gives is absolutely delicious, but I couldn’t help adding my own twist with some spelt flour and the zaatar and dukkah. The reality of gathering has changed so much, so for today’s foodcapturecollective #monthlytechniquecollab gathering theme, I thought to showcase a simple reflection of gathering in my house. Growing up, especially when visiting Egypt, little dishes spread out on a newspaper or a very low table for us to sit and eat on was a daily thing, and it was never fancy, but I always enjoyed the gathering and felt happy to be part of a family that celebrates food in this way. Today I can only gather with my little family, but setting a little table of dishes they enjoy and seeing their hands pick and choose what they like and make little plates for themselves brings back that feeling from when I was younger. Tahina has been my bff in all my baking these last two weeks. Banana bread, chocolate chip cookies, and now shortbreads have all gotten a makeover by adding this delicious pantry staple. The kids have been enjoying the extra kitchen time and all that has come out of it, and when I make treats with real ingredients, I don’t feel guilty letting them indulge. These honey and tahina shortbread cookies came out perfect.. figured I’d share them with all my tea lovers out there! Recipe: 300g flour 150g butter 80g sugar 50g honey 100g tahina 100g milk 1 tsp cardamom 1 tsp vanilla extract 1/2 tsp baking soda Pinch of salt Sesame seeds for coating In a stand mixer, blend the flour and butter together. Add the remaining ingredients except for the sesame seeds and mix until a soft cookie dough forms. It should come together but not be sticky. Roll the dough into walnut sized balls, roll each into sesame seeds, and place on a baking tray.
