I haven’t been posting too many lunches lately because I basically go through a rotation of about 5 or 6 of the same lunches, week in, week out. How boring, right? Yes, while it’s easy and doesn’t require much thought at 5:45 in the morning, it does get really BORING! Today, I decided to make something that required a leeeetle more effort: Naan Pizza in LunchBots! I haven’t actually used my LunchBots in a while, either, so I was happy to put these lovely boxes to good use again

The mandoos (Korean dumplings) and pajun (Korean scallion pancakes) are both store-bought from the frozen section and make for a nice hot lunch. I’ve made these from scratch on many an occasion, but BiBiGo’s dumplings taste so good that it sometimes isn’t worth the effort. These are labeled with a “nut-free” symbol which put’s Big Sis’ anxious mind at ease. They had to change their co-packing facility for the waffle chips this summer due to operational reasons and the new facility has a risk of cross contamination in almond, pecan, macademia and hazelnuts.
That meant, of course, I had to find a homemade broccoli cheddar soup recipe to make my own. Last week, during Little Sis’ first week of track out, I ventured to hold a mini “track out camp” and watched two of her soccer buddies for four days. I gave them some options and their first lunch of choice included homemade broccoli cheddar soup! Made Good nut-free/gluten-free snacks, a beef stick, grapes and broccoli cheddar soup in a thermos, of course!
