Last night, as the snow fell and the below zero temperatures rolled in, we decided to open a special bottle. So the cork pops out of the last bottle of the Tolenas Eclipse White Pinot Noir. Ok, ok so I’m getting a little ridiculous here, but let me tell you, the way this wine made my taste buds dance got me out of my cabin fever misery. Rewind to harvest 2017, when they decided to produce a White Pinot Noir.
Originally named “petillant naturel” (an old school style of winemaking), this wine style is popping up in tasting rooms and wine shops around the country. I had the pleasure of trying a Pet Nat from Tank Garage Winery called Space Crush. The exterior is an old motor cycle garage and gas station converted to look like it’s straight out of the 50’s. When you enter the tasting room you feel like you just walked into a Baja surf shop combined with some killer motor cycles on display.

Coupled with their rock star of a winemaker Harry Hansen, Sterling Vineyards is creating wines that showcase specific vineyard blocks and bring out flavors that tantalize your palate. I’d pair it with a winter salad, fresh fish, chicken, and something to celebrate (like making it to Wednesday for example ;)). If you’re looking for a bold, silky, but structured Cabernet Sauvignon I’d pick up the Yates Mount Veeder Cabernet. Mount Veeder is known for it’s rich, intense soils which create delicious and age worthy wine.
