Roasted Veggie Cobb Salad is a flavorful salad full of roasted carrots, radishes, onions, mushrooms, bell peppers and topped with balsamic dressing. I love the combination of fresh vegetables, hard boiled eggs and bacon on top of salad because it’s so much more filling that way and can easily become a meal. If the idea of putting hot roasted vegetables on top of a salad makes you want to cringe, I’m right there with you. That’s one of the best things about roasted veggies – whether hot, room temp or cold, they’re still good!

I received product samples from sponsor companies to help in the creation of the #SpringSweetsWeek recipes. Orange Cream Overnight Oats is a dairy-free breakfast or snack, made with oatmeal, non-dairy milk and a delicious Orange Cream flavoring. I can’t find them in stores at all any more and the kinds I can find don’t taste the same.
