#hosted A moment of appreciation for the food in Costa Rica🇨🇷. I’ll be honest, I usually am obsessive preparing for a trip anywhere. I need to have all the restaurants and bakeries plotted into a Google map or list. If it’s a country where English isn’t the mother tongue, I have a translated card ready to use. I have to thank @zaneytravel for making my trip preparation less stressful. We had local guides that spoke both Spanish and English to assist with translation and ask the appropriate questions. I found the cuisine to be celiac friendly overall. A typical Costa Rican breakfast or lunch would be served “Casado” style which has many variations, but typically consisted of rice, beans, protein and veggies all on one plate. What I liked about @zaneytravel is that they’ve vetted every restaurant/“soda” that we stopped at. You could usually tell it was safe because you’d spot the “Zaney” sticker in the establishment. Same with the resorts. Both @arenalspringscostarica and @crocscasinoresort were equipped to handle our gluten free needs. ✌🏻✈️BRB, signing out of the office shortly but first, here’s a recap of what’s been going on behind the scenes. The bad: ❌ Got glutened ❌ Ariana caught a mild cough ❌ I have been doing everything in my power to AVOID toddler germs ❌ Ran around getting legal documents notarized The good: ✅ My tummy is on the mend ✅ Thankfully it’s ONLY a cough, had some slight anxiety doing Ariana’s rapid test ✅ It’s the end of the week and I’m still healthy🤞🏻 ✅ Selling my share of the Arizona property means I’ll be severing one of the last remaining ties with my past life. This is huge! 🥳 I’m thrilled to be travelling again since it’s something I’m passionate about. However, travelling solo is very outside my comfort zone. While I am meeting some of my online friends there, everyone is technically a stranger and I’ve never flown alone. I’ve also never been away from my daughter this long. At the same time, there is no guilt in putting myself first and prioritizing self care. Deep down this is what drives my soul and I hope you’ll follow along with me. I know I’m a great catch but I’ve found putting myself out there incredibly frustrating and a lack of open minded people. (Automatic unmatch❌) - It doesn’t seem like you would have enough time to date, I need a woman with a more flexible schedule - I just want to spoil single Mom’s and send you them on a shopping spree (is this a fetish, WTF?!) - You have help from your dad, why can’t you come see me today and be spontaneous I’m up front with the fact that I have a toddler as I get that lifestyle isn’t for everyone. I’ve been unmatched and ghosted more times than I can count but I’ve learned to turn that into a positive thing, that those men were simply “not my people”. 🍾I’m feeling ‘22🍾 Happy New Years Eve💫💕 I’m not here to pressure myself to set big resolutions, as I believe we should feel called to set new intentions at any time, but I do have some reflections on the last year that I want to share. What didn’t go right👇🏼 - Career advancement within my company - Dating was pretty much a shit show this year during the pandemic. It takes a lot putting yourself out there and mostly I was left feeling like a depleted battery How to see the positive in the above. I will trust that what’s meant for me, both personally and professionally, will not pass me by. The good things👇🏼 - Returned to work after my leave and adjusted to the work from home dynamic - Celebrated a 5 year work milestone - Invested in myself through personal branding photos, courses, etc. - Was vulnerable on social media about some of the struggles I was facing and had a lot of beautiful conversations with this community - Built deep connections with some new friends - Settled a few legal things - Had some really awesome partnerships - Celebrated my loved ones’ milestones in person - Released a lot of resentment and anger, learned to forgive myself and move forwards What I want for 2022👇🏼 - Continuing to work on myself emotionally, spiritually, physically, professionally, and recognizing that it’s okay to be a work in progress - Dating with intention - only spending my time with those that align. This means checking most of my boxes, and being ready to meet me where I’m at - Traveling - long overdue but I’m ready for it, solo or not - Finally, continuing to share all the best gluten free finds with you 💚 If you feel called to do so, feel free to share your little wins with me ☺️. Did you get a chance to visit your local store to pick up the Ladyfingers from @scharglutenfree? As promised, here is my recipe for what I like to call a “Lazy Tiramisu”, as it only requires one layer of both cookies and cream. It is allergy friendly, liquor-free, and uses minimal ingredients. Basically, a lighter dessert, with Schar’s Ladyfingers stealing the show. Ingredients: - 1 can coconut cream, chilled in the fridge overnight - 1 tsp vanilla - 2 cups of coffee, chilled (approximately) - you can use decaf or regular coffee - 1/2 cup coconut sugar - 1 pack Schar Ladyfingers - Chocolate for shaving on top or cocoa, sifted Instructions: 1. Brew coffee of your choosing and let it chill. 2. In the meantime, add coconut cream to a mixing bowl and whip. Add in vanilla and sugar and whip. 3. Once coffee is chilled, dip your lady fingers in the coffee, soaking both sides, and filling the bottom of your dish. 4. Spread the coconut cream on top of the coffee soaked ladyfingers. 5. Grate your choice of chocolate on top or add sifted cocoa. 6. Chill in fridge for a few hours and enjoy! Just casually stepping out to bring freshly baked cookies to my neighbours 🍪. I have partnered with @enjoylifefoods to create an allergy-friendly shortbread cookie recipe using their Semi-Sweet Chocolate Mini Chips. I’m of the belief that nobody should feel left out of holiday baked goods! Since Enjoy Life products are free-from wheat, peanuts, tree nuts, dairy, soy, egg, sesame, casein, sulfites, lupin, mustard, fish, shellfish & crustaceans, everyone can feel included this holiday. I enlisted the help of Ariana to adapt a family recipe. Here’s what you need: • 1 cup vegan butter, softened • Half cup granulated sugar • 2 cups gluten free 1:1 baking flour • 2 tbsp. corn starch • 1 cup @enjoylifefoods Semi-Sweet Chocolate Mini Chips To create: - Preheat the oven to 325° F. Line baking sheets with parchment paper - Cream vegan butter and sugar in a mixing bowl. Stir in gluten-free flour and cornstarch and mix well - Add in @enjoylifefoods chocolate chips - Knead dough into a ball with your hands, and ensure it is smooth - Use a tablespoon or a cookie scoop to drop dough onto cookie sheets - Bake in the oven for 20 to 25 minutes. Enter “vegan brie & pomegranate toast”! This is a fan favourite holiday appetizer, so why not create it on your toast? I was able to source a creamy, plant-based 🌱Brie, so I spread that all over my toast and topped it with freshly peeled pomegranate seeds. I love that this particular loaf is filled with sunflower seeds, flax, chia and pumpkin seeds because it packs quite the crunch.
