Easy Vegan Cinnamon Rolls

A healthier version of this beloved sweet, these vegan cinnamon rolls are high in fiber yet still soft and super gooey. A simple brown sugar glaze drizzled on top makes for a super delicious indulgence with a cup of coffee or for Sunday brunch. These vegan cinnamon rolls are made with a portion of spelt flour for a boost of nutrients, however, whole wheat flour can be used in exchange. These vegan cinnamon rolls are super easy to make and certainly reminiscent of traditional versions.

Strawberry Streusel Loaf [vegan]

Rhubarb is just starting to emerge from its winter-y bed and strawberry plants are slowly waking up in this gorgeous sunshine we’re having. Today, I’m sharing this simple strawberry streusel cake as an early homage to the season over on Baked The Blog. A streusel topping glorifies this strawberry studded quick bread; a little sweet hit and crunch this treat needs. While I don’t always suggest buying fruits out of season, there is something to be said for buying extra during the spring and summer months and freezing them for times like this.

Double Chocolate Beetroot Cake {dairy free, vegan}

This noteworthy double chocolate beetroot cake is beyond good; it’s sure to surprise unsuspecting palates. Beets are naturally sweet, and despite their distinctive flavour, they pair really well with chocolate…so well that they’re practically undetectable in this recipe

Cranberry Persimmon Crisp

This week, I shared another simple and easy recipe over at BAKED the blog. Don’t let their tomato-like appearance and texture turn you away, they’re a lovely sweet seasonal fruit. For this recipe, I’ve turned ripe Hachiya persimmons and tart cranberries into this simple fruit crisp. In this recipe, cranberries and persimmons are paired beautifully with a hint of orange and cinnamon in this easy and comforting dessert.
