It’s hard to fathom that this time last year, I was just entering the third trimester and it would still be 3 months before we’d meet Oliver. He knows what he likes and doesn’t like, and will clearly tell you when he’s frustrated or wants something. Oliver was an absolute mess whenever we weren’t there, so I knew I wouldn’t be able to live with myself if I left him like that for three straight days (and flew across the country). He’s obviously a very healthy boy ;), so he probably doesn’t need to eat in the middle of the night.
It’s Taco Tuesday and I’m actually posting a taco recipe? ? ? And not only am I sharing a taco recipe, but I’m sending you the EASIEST weeknight dinner imaginable. You could honestly use many different kinds of fish here (cod, mahi, salmon, etc), but today I’m using Arctic Char. By the time the slaw is prepped, your fish will be ready to come out of the oven and it’s time for the super quick assembly.
