So after our trip to Mexico and seriously THE best coconut ice cream I have ever tasted in my life, I just had to try to recreate the flavor myself! I had a yummy AND healthy coconut ice cream I can enjoy any time I want. (And believe me, I want ALL of the ice cream with this little babe on the way.) A yummy and creamy variation on the traditional ice cream recipe Combine all of the ingredients in a bowl and mix well.
I know the nutrition thing is complicated that’s why I love being able to work with other women to figure it out. So I wanted to dig in to what happens when you don’t eat enough so that if you’re like many of the women I talk to you can start serving yourself a little better. Now of course, that’s not to say just eat whatever you want, but what you can do is add in an extra snack or two (on top of your normal intake) of whole fresh veggies or fruit with a little nut butter or cheese and see if it makes a difference.
