why are salad kits so underrated?! i never leave the store without one because they're perfect in a pinch!🥬 adding sliced deli meat is the quickest protein option imo (unless you have leftovers), but a 7-minute egg is another favorite🍴 other ways i make them more filling: - nuts - cheese (the dairy free @boursincheese is life!!) - hemp seeds sprinkled on top - hummus stirred in with the dressing

gotta nourish to flourish🌱 & this chickpea tahini salad is packed with fiber, protein, healthy fats and a ton of flavor🤌🏼 i pair it with @miltonscraftbakers Gluten Free Crackers that are certified gluten free, non-gmo and perfectly light & crispy (most of the time i’m just eating them straight from the bag tbh…) I love their olive oil & sea salt flavor for this particular recipe, but the everything and multi-grain are other favorites, too! find them at Walmart, Whole Foods, Sprouts, and Publix🤩 CHICKPEA TAHINI SALAD ⅓ cup tahini 3 tbsp olive oil 1 clove garlic, finely chopped 3 tbsp lemon juice 1 can chickpeas (rinsed) ½ cup chopped celery ⅓ cup tomatoes or cherry tomatoes 2 tbsp chopped green onion Salt + pepper to taste in a large bowl, WHISK together the tahini, olive oil, garlic and lemon juice, STIR in the chickpeas, celery, tomato, green onion and spices. SERVE with Milton’s Gluten Free Crackers right away or store in the fridge for up to 5 days. #makeitmiltons #ad

been trying to focus more on what's really important these days🫶🏼 i think it's too easy to overcomplicate what we "need" to make us happy, when really it's quite simple: spending time with the people we love, doing things that fill our cup, and soaking up each day we're given✨

perfect for anyone currently in a heat wave (which is basically everybody😅) and hot summer days!🍉☀️ all you need for this frozen watermelon lemonade: 1 cup of ice, 1-2 cups of lemonade, and 1-2 cups of watermelon. the dried orange garnish is cute, but not necessary!

when v was first born, i had a really hard time letting go of my morning routine😅 i had to sleep in so much later than i was used to just to catch up on the rest, which meant my old rituals like journaling & a walk flew out the window! i honestly felt like i was being lazy and unproductive, but now that i'm a few months in, i realize that "productivity" is relative, and being with my girl is the only thing that actually matters right now. this whole motherhood thing has been one big lesson in letting go of expectations, and instead just being present in the here & now, whatever it may look like🥰 // set by @kat_thelabel

Roadtrip & Colorado Recap (plus a Big Life Update!)

We listened to audiobooks almost the entire time, stopped in Utah for the night on the way there, pulled off on the side of the road to admire the rock formations, and stopped in a little town in CO called Grand Junction for awesome tacos. We cooked more instead of dining out (I share more of my favorite spots in Breckenridge this post and this post!), but were able to grab takeout from our favorite spots like Giampietro’s for pizza, Mi Casa for Mexican, and Clint’s for coffee! Though it was bittersweet to leave (the week went by too quickly and it’s my favorite place), we planned our stop on the way home to be in Vegas instead of Utah so we could do some exploring. I’m not sure if this is the case when we’re not in a pandemic, but we had to buy “tickets” online in advance and choose a specific time!

Chai Spiced Sugar Cookies (Vegan/GF)

The ingredients are nutritious enough for them to pass for breakfast, so I didn’t feel too badly 🙂 1 cup cassava flour 1/2 cup almond flour 1 tsp each nutmeg, cardamom, cinnamon, ginger & cloves 1/4 tsp salt 1/2 cup melted coconut oil 3/4 cup granulated sweetener (I used an allulose blend!) 1 flax egg (1 tbsp flaxseed, 2 1/2 tbsp water) 1 tbsp vanilla extract 3 tbsp almond milk optional: cinnamon + sweetener Combine the wet & dry ingredients and stir till completely combined. form into slightly flattened rounds and place on a parchment lined or greased baking sheet.

5 Things I've Been Doing for My Mental Health

As I’m navigating it all, I’ve had to take a step back from this blog because after many 12+ hour days staring at my laptop and phone, I’ve mostly just been wanting to check out and turn off my brain entirely! It’s tough when most of my life is social media (both my full time job and side hustle), but I’m learning to spend any free time I have doing anything else. I’m trying to remind myself that I have a right, just like everyone else, to take time off and not be on email 24/7! I’ve realized that the only person putting that pressure on myself to post on Instagram everyday, write on this blog, post YouTube videos, make Tik Toks and all of these other things is me.

I haven’t even taken a beat to reflect on all that’s happened in the last few weeks – personally, professionally, in the country and in the world! I feel like 2021 is honestly looking up and while we still have a ways to go before things start to feel I’ve taken the pressure off myself when it comes to this blog and my social media, and that’s turned it back into an outlet where I can share freely, create, write, and ultimately, just enjoy! Ok I know this is a bit of a splurge, but you can usually find Pressed doing some kind of sale and when you do, please get their almond milk and put it in your coffee.
