BANANA BREAD PANCAKES WITH CREAM CHEESE & BANANAS 😍 β€’β€’β€’ Happy weekend, everybody! What do you plan to make for breakfast or brunch today? I have for you these pink and super yummy banana pancakes 😍πŸ₯žπŸŒ Definitely one of my favourite meals ever! β€’β€’β€’ πŸ›’ You'll need: - 1 ripe banana (mashed) - 1 egg/1 flax egg - 80 g oat flour - 100 g dragon fruit puree @pureefoods - pinch of baking powder - banana slices, cream cheese (dairy or dairy free), bee pollen, sunflower seeds for the toppings β€’β€’β€’ 🍽 Preparation: First you'll have to prepare the pancake batter. Mash the banana with a fork, beat the egg, defrost the puree if you're using frozen and mix all of the ingredients except for the garnishes. Heat a non-stick pan and using a spoon pour the batter to form pancakes (you can add tiny amount of coconut oil if you want to fry them). Bake each side for 1 minute until they turn golden-brown. You can caramelise your banana slices by simply frying them a little in some coconut oil on both sides. After making the stack of pancakes, add the cream cheese, the caramelised banana slices, the seeds and the bee pollen 😍 This recipe makes 2 servings or 1 really big breakfast. DRAGON FRUIT & COOKIES SMOOTHIE BOWL 😍 β€’β€’β€’ SWIPE FOR THE SPOON 😍➑️ Happy Wednesday, everyone! A few days ago @pureefoods sent me some of their products to try and for today's breakfast I made a bowl with their dragon fruit frozen blocks 😍 β€’β€’β€’ I blended two frozen bananas with 100 g frozen dragon fruit puree (1 block) until thick and smooth (add 1 tbs cold water/milk if needed) 😍 I then transferred it into one of my coconut bowls and topped it with some cinnamon cookies, bananas & bee pollen 😍 I didn't add any sweetener but you can if you want. PEANUT BUTTER & HAZELNUTS CHOCOLATE BANANA BREAD TOAST 😍 β€’β€’β€’ Happy Monday, guys! What better way to start off the week than with some peanut butter toast? And to make it even better - I made it BANANA bread toast 😍 Sooo good! I recommend you trying this combo! Absolutely delicious! β€’β€’β€’ πŸ›’ You'll need: - 2 ripe bananas, mashed (around 280 g) - 2 eggs, medium - 150 g brown sugar - 150 g applesauce - 270 g all-purpose flour - 20 g cacao powder - 10 g baking powder For the toppings: - peanut butter or other nut butter - hazelnuts or other nuts 🍽 Preparation: FOR THE BANANA BREAD: In a large bowl, beat the eggs with the sugar. Add the applesauce to the egg mixture and combine it well. Next, add the pre-sieved flour, the baking powder and cacao, and mix it thoroughly. Add the mashed bananas into the bowl. Preheat your oven to 180Β°C. Line your banana bread pan with some parchment paper. Pour the mixture in and spread it evenly across the pan. 🍞 Bake for 50 minutes to 1 hour, until it's fully cooked. Bring it out of the oven and set it on a rack to cool down πŸ‘Œ FOR THE TOASTS: You can toast the banana bread or have it as it is. Spread some of that delicious peanut butter and add some crushed hazelnuts on top. Absolutely delicious and super easy to make! Today I made my banana chocolate porridge again and loved every bite πŸ€©πŸ™Œ Even though it's summer right now, today we had a rainy day, so it was the perfect time for this! β€’β€’β€’ I prepared my basic oatmeal recipe (50 g @lagarone whole grain rolled oats, mixed together with 250 ml water/milk of your choice and a pinch of salt and cooked in a pan until all the liquid was absorbed). I mixed it together with 1 teapoon of cinnamon, 1/2 mashed banana, transferred it to a bowl and topped it with bananas, blackberries, bee pollen and a hazelnut @kitkat . Sooo good! BLUEBERRY JAM PANCAKE ROLLS 😍 β€’β€’β€’ Happy Monday, everybody! Today I have for you these pancake rolls with jam and I think you'll love them 😍 I certainly do πŸ™Œ It's my quick version of crepes and I really hope you enjoy πŸ™Œ β€’β€’β€’ πŸ›’ You'll need: - 1 egg - 1 cup flour - 1 cup water or milk (dairy or dairy-free) - 1 tablespoon oil β€’β€’β€’ 🍽 Preparation: FOR THE CREPES: First you'll have to prepare the pancake batter. Mix all of the ingredients together until well combined. Heat your pan really well (that's important). Drizzle it with just a little bit of oil and spread evenly across the pan's surface. Then pick the pan up from the stove top and pour into it enough mixture to cover the pan thinly. You can use a small ladle for measuring. Then using a circle hand motion spread the amount of mixture across your pan, so that it's bottom is all covered. Wait until the ends of the pancake start to rise (peel off) slightly from the pan and flip your crepe with a spatula. Repeat until all mixture is cooked. FOR THE ROLLS: When all your pancakes are ready (you'll get around 4 or 5 from this mixture), it's time for the jam 😍 Cover one pancake with jam, roll it tightly. Then cover another pancake in jam, put the rolled crepe onto the second one's end and roll them together (to form a bigger roll). Or you can just make tiny rolls from single pancakes. Then cut into rolls and put them carefully on a wooden skewer. They look so beautiful and also, really yummy. I really look forward to seeing your creations. Mash the banana with a fork, beat the egg and mix all of the ingredients except for the garnishes. Heat a non-stick pan and using a spoon pour the batter to form pancakes (you can add tiny amount of coconut oil if you want to fry them). Bake each side for 1 minute until they turn golden-brown. After making the stack of pancakes, add the peach slices with just a tiny bit of oil and brown sugar (optional) to the pan and caramelise on both sides. BANANA & BLUEBERRY OVERNIGHT OATS 😍 β€’β€’β€’ SWIPE FOR CONSISTENCY 😍➑️ Happy Thursday, guys! This mornings breakfast was a feast 😍 Overnight chia oats are my favourite breakfast in the summer! So fresh and delicious! β€’β€’β€’ I mixed 300 g thick yoghurt (you can use your favorite) with 100 ml filtered water (you can add less water if your yoghurt has a runnier consistency) and 40 g oats and 20 g chia seeds in a small container with a lid. I then put it in the fridge overnight, so that the mixture could soak up all the excess liquid. This morning I transferred it to a bowl. I then topped it with some bananas, homemade blueberry jam (you can warm some fresh or frozen blueberries in a pan as well) and more chia seeds 😍 I didn't use any additional sweetener but you can add some if you want. DOUBLE BERRY MUFFIN BAKED OATMEAL 😍 β€’β€’β€’ SWIPE FOR THE INSIDE 😍➑️ Happy Tuesday, everyone! Today I skipped my stove top oats again and made some berry baked oatmeal 😍 β€’β€’β€’ πŸ‡ You'll need: - 80 g oat flour - 10 g flax flour or grounded flaxseeds - 10 g chia seeds - 100 ml milk of choice/water - 1 mashed banana (around 100 g) - cinnamon and baking powder (a pinch of each) - a small handful of blueberries and strawberries (cut into smaller pieces) each β€’β€’β€’ Mix all of the ingredients except for the berries. Give it a good stir and then add them in. Scoop the batter in a small oven proof ramekin (you can put a little bit of oil around its walls, so that the muffin doesn't stick) and put some more berries on top. Bake at 180C for around 25-30 minutes until it is cake-like. They were kind enough to send me three of their tea flavours to try and share with you my opinion. This right here is the Jasmine Dragon Pearls (Organic Green Tea). It is a very beautiful tea and an elegant work of art. Its production is a long and involved process, and takes over a month to make. Buds, leaves and jasmine flowers are picked separately and dried carefully. This tea has a really strong flavour and a very nice scent to it. I really enjoyed drinking it. FRENCH TOAST BOWL 😍 It's the weekend and what better time to treat yourself than right now πŸ™Œ Today I have for you this bowl of goodness which I tried for the first time and man, was it good 😍 🍞 You'll need: - 1-2 bread slices (use your favourite bread) - 1 egg - yoghurt (dairy or dairy-free) - blueberries, strawberries - chia seeds 🍞 Preparation: Beat the egg into a shallow bowl. Then put both sides of the bread slices into it, so that they are well covered. Heat a non-stick pan, add some oil if you want and bake/fry the French toast on both sides. When they are ready, slice one of them into cubes.
